A terroir in two parts :
• a sandy, loamy plateau with fine gravel to a depth of 50 cm
• a gravelly outcrop essentially composed of large Pyrenean stones on the surface with clayey gravel underneath
GRAPE VARIETY
30 % Sémillon, 70 % Sauvignon
HARVESTING AND VINIFICATION
Manual harvesting, on-skin maceration. Low temperature fermentation and maturing on fine lees.
All the vinification is performed in small, temperature controlled stainless steel vats for optimal enhancement of the features of each grape variety and of each plot.
